A slow grower breed, red heritage chickens are a little more gamey than their white feathered counterparts but have less meat to bone ratio. Compared to white feathered chicken, red heritage birds have a yellow tint on the meat and fat.
Red chickens are not mass produced like white feather chickens, and as a result, cannot be found in most supermarkets. Over the last decade, we have seen a surge in demand for red heritage chickens as more people learn of their existence and unique taste.
A red chicken can be roasted, fried, or simmered in a soup pot, just like a regular chicken.
